Introduction

This is one of my"go to" breakfasts.
This is one of my"go to" breakfasts.

Number of Servings: 1

Ingredients

    2 large eggs
    about 8 leaves of fresh spinach
    2 slices of tomato
    2 slices of Udi's GF toast

Directions

Poach the eggs until desired doneness,
place eggs, spinach, tomato on top of the Udi's toast and enjoy!

(may butter toast if desired. Can be dairy free also is Earth's Balance is used)
