Chile Relleno Breakfast Treat

Introduction

I love Chile Rellenos, but deep fried is out for me, so I found this by playing around. It's a little higher in calories than normal, but worth it to me! I use fresh chilis in season, but mostly the whole ones I purchased canned at Costco. I love Chile Rellenos, but deep fried is out for me, so I found this by playing around. It's a little higher in calories than normal, but worth it to me! I use fresh chilis in season, but mostly the whole ones I purchased canned at Costco.
Number of Servings: 1

Ingredients

    1 8 oz tortilla
    1 egg
    1 egg white
    2 T. Water
    Salt and pepper to taste
    1 or 2 whole green chilis (to your taste)
    1/4 cup refried beans
    1/4 c. Kraft Shredded 2% Mexican Four Cheese blend,

Directions

Scramble egg and egg white, adding about 2 tablespoons of water. Add salt and pepper to taste. Spray small skillet with cooking spray and heat to med high heat. Make omelet type egg adding green chili(s) pepper when egg is set. Spread beans on half of tortilla and top the whole tortilla with the cheese. Place omelet on half and fold over. Bake at 400 for about 10-15 min, until lightly browned. Can be eaten with Salsa on top.
