Tomato Avocado Omelette

Ingredients

    2 Large Eggplands Best Eggs
    Milk, nonfat, 0.25 cup
    1 tsp Olive Oil
    Red Ripe Tomatoes, 1 plum tomato
    Peppers, sweet, red, raw, sliced, 0.25 cup
    Onions, raw, 1/4 cup, chopped
    *Cheese, Sargento Reduced Fat Sharp Cheddar , 1/4 Cup
    Avocados, California (Haas), 0.25 fruit without skin and seeds

Directions

Mix egg beaters and milk. Add salt, pepper to taste. Set aside.

Spray nonstick skillet with spray, add olive oil, sautee chopped pepper and onion. Add egg, cook until set, add tomatoes , cheese and avocado in the middle, fold over. Heat until cooked through & cheese melted.
