Gert's Crepes (7inch)

Introduction

I grew up with regular crepe-style pancakes. I added a healthier twist to this old favourite.
My favourite topping for these is fresh fruit.
As a dessert you can roll them up with fresh fruit, pudding and cool whip inside.

Number of Servings: 8

Ingredients

    3 large Egg, fresh
    1 cup Milk, 2%
    1/2 cup oatmeal, raw
    1/2 cup Flour, white
    2 tbsp Flax Seed Meal (ground flax)
    2 tbsp Flax Seed
    1 tsp Olive Oil

Directions

You will need:
a 7inch frying pan
a silicone brush
a whisk or wooden spoon for mixing
1/3 cup measuring cup
a spatula
a plate to put the finished crepes.

In a small mixing bowl, combine all ingredients except olive oil. Mix well until smooth. Preheat frying pan on medium-high heat. With silicone brush give pan a light coating of olive oil. Scoop batter with measuring cup. Pour batter into frying pan and smooth it out to make a 7 inch crepe. Flip crepe with spatula after about 2 minutes. Remove from pan after 1 minute. Makes 8 7inch crepes.


*oatmeal can be used whole or processed in blender or food processor as a flour
*for more fibre use whole wheat/grain flour
