Spicy Country Skillet

Introduction

A hearty, country breakfast great for any weekend! Or cook ahead of time and store in the fridge! A hearty, country breakfast great for any weekend! Or cook ahead of time and store in the fridge!
Number of Servings: 4

Ingredients

    1.5 Tbsp extra virgin olive oil
    1 cup red potatoes, cubed, with skin on
    .5 cup lean ham, diced
    .5 cup chopped onion
    .5 cup chopped bell pepper
    .5 cup black olives
    .5 cup mushrooms, canned or fresh
    2-3 jalapenos, minced (optional)
    1 large egg
    3 egg whites
    mozarella cheese (optional)

Directions

Heat olive oil in a nonstick skillet. Cook potatoes until almost soft. Add ham, onions, bell pepper, olives, mushrooms and jalapenos. Cook until heated. Stir in egg and egg whites. When eggs are thoroughly cooked, sprinkle with mozzarella cheese. Serve immediately with fresh salsa.

Makes 4 1.5-cup servings.
