Introduction

Two corn tortillas, 3:1 ratio eggs, extra lean ground white turkey, mixture of sweet red, yellow and orange bell peppers. A great way to start your day! Ingredients

    1 Egg
    2 Egg Whites (or 1/2 c liquid egg whites)
    1/4 c Red, Yellow, Orange Bell Peppers chopped
    1 oz White Ground Turkey meat (previously cooked & seasoned)
    2 Corn Tortillas
    Optional: low fat cheese, salsa

Directions

Heat non-stick pan (medium heat) with alittle water. (optional: non-stick spray)
Add chopped bell peppers
In a bowl, Mix 1 egg with 2 egg whites.
Add eggs to peppers in non-stick pan. Turn heat low.
Stir constantly until eggs are no longer wet.
Re-heat turkey. (microwave or pan)
Heat tortillas (your favorite way...tortilla iron pan or microwave)

Build your tortilla:
Scoop turkey onto tortilla, scoop eggs on turkey.
Fold and enjoy your tacos.
