Macaroni & Cheese, Gluten-Free

Introduction

This is a delicious gluten-free macaroni & cheese made with rice pasta. This is a delicious gluten-free macaroni & cheese made with rice pasta.
Number of Servings: 6

Ingredients

    6 oz. Rice Pasta (brown or white)
    2 Eggs
    2/3 cup Non-Fat Milk
    1 tlbs. Cornstarch
    3 oz. Colby or Cheddar Cheese
    3 oz. Italian Mix Cheese


    Topping:
    Gluten-free bread crumbs
    2 oz. Colby or Cheddar Cheese

Directions

Pre-heat oven to 350. Boil pasta following package directions and strain. Mix eggs, milk and cornstarch in microwave safe bowl. Heat on high for approx. 1 minute. Add mixture to pasta and stir in cheese. Top with bread crumbs and remainder of cheese. Bake uncovered for 30 minutes or until top lightly browned and crusty. Makes 6 servings.
