Vegan Zucchini Muffins

Introduction

Number of Servings: 12

Ingredients

    1 cup whole wheat pastry flour
    1 cup all-purpose white flour
    3/4 tsp baking powder
    1/2 tsp baking soda
    1/2 cup unsweetened applesauce
    1/4 cup brown sugar
    1/4 granulated sugar
    1 tblspn vegetable oil
    2 tblspn ground flaxseed
    2 cups shredded zucchini

Directions

Combine and mix dry ingredients: (1 cup whole wheat pastry flour, 1 cup all-purpose white flour, 3/4 tsp baking powder, 1/2 tsp baking soda)
In separate bowl combine 1/2 cup unsweetened applesauce, 1/4 cup brown sugar, 1/4 granulated sugar and
1 tblspn vegetable oil.
In another little bowl mix two tablespoons ground flaxseed with 6 tablespoons water. Add the flax seed (egg substitute) to the wet ingredients and the mix the wet into the dry.
Add the zucchini until just mixed and then spoon into oven at 350 degrees. Start checking for doneness after 30 minutes.
