unbelievably moist, low fat corn bread

Submitted by: ADRIENNE29

Introduction

I was trying to make a "cleaner" version of cornbread to go w/ our chili dinner and used what I had on hand. I am sure you could reduce the honey and save some calories that way. Since this was my first experiment, this is how I did it. This was the BEST corn bread I have EVER made! • I made a similar version with skim milk, Greek yogurt, sugar, self-rising cornmeal. Instead of buttermilk, honey and using baking powder. We always put the butter into the skillet and in the oven while mixing ingredients then pour the butter into the mix before baking the corn bread. Very moist! - 11/17/14

  • wayyyy good. I did cut the honey and butter in about half, and fyi, homemade greek yogurt works too. I made a half recipe into muffins (375 for 15 min in convection oven) This will be a go-to. - 2/23/12
