Egg white omelet

Introduction

I don't like the cheese in my omelet but you can certainly include it if you want. I prefer to sprinkle fresh grated Parmesan on top or even mozzarella. Ingredients

    3 lg eggs, yolks removed
    1/2 green pepper, chopped (or half cup)
    1/2 c chopped red onion
    1/2 c diced tomato
    1/2 c wilted spinach (chopped is easier to eat)
    1/2 c sliced mushrooms
    1/2 tsp fresh ground black pepper
    1/4 tsp garlic, minced
    dash of sea salth

Directions

Saute all the vegetables, except spinach, in a non-stick saute pan with garlic and pepper until tender (about 2 min). Pour in mixed egg whites to the vegetable pan and cook till white and stable enough to flip. Flip, add spinach to top of eggs to wilt and finish cooking. Fold on to plate and top with a sprinkle of choice cheese (not included in nutrition values). Salt and pepper to taste.
