Cheesy Beef and Potato Casserole

Introduction

Use low fat or fat free cheese, soup and sour cream (I couldn't find them to enter them). Using ground turkey instead of beef also drops the fat and calories! Not the best of dinners but its a fast easy comfort food when you need one. Use low fat or fat free cheese, soup and sour cream (I couldn't find them to enter them). Number of Servings: 4

Ingredients

    1 cup of Ore Ida Potatoes O Brien (or just shredded potatoes)
    2 cups Fat Free Shredded Cheddar Cheese
    1 can reduced sodium Cream of Mushroom Soup
    1 cup of Sour Cream, (remove)
    1 lb of Ground Beef, Crumbled
    1 can of corn

Directions

Preheat oven to 425
Brown beef and drain fat off.
In a separate bowl combine soup, sour cream and cheese.
Mix well.
Add a layer of potatoes to a sprayed 11x9 pan.
Add the beef over the potatoes
Add the can of corn on top of the beef
Add the soup mixture as the final layer.
Bake uncovered for about 30 minutes.
