Ingredients

    Muffin ingredients:
    -3 tsp ener-g egg replacer + 4 T water
    -7.5 oz canned pumpkin
    -1 cup Ideal No Calorie Brown Sweetener (or brown sugar)
    -0.5 cup unsweetened applesauce
    -1.5 cups whole wheat pastry flour
    -1.5 tsp baking soda
    -1 tsp cinnamon
    -0.5 tsp pumpkin pie spice
    -1 tsp salt

    Glaze:
    -0.25 cup sugar free maple syrup
    -2 T Ideal No Calorie Brown Sweetener
    -0.5 t cinnamon

Directions

Preheat oven to 350 F.

Prepare ener-g egg replacer (or other egg replacer).

Whisk together "dry" ingredients (flour, spices, salt, soda) in a large bowl.

Combine "wet" ingredients (pumpkin, brown sweetener, applesauce, vegan "egg") in a medium bowl.

Gently mix "wet" ingredients into "dry" ingredients. Be careful not to over mix. Spoon batter in 12 muffin cups. Place in oven for 20 minutes.

While muffins are baking, whisk together ingredients for glaze. After 20 minutes, spoon glaze on top of muffins. Return to oven for another 5 minutes (or until an inserted toothpick comes out clean).

Makes 12 muffins.
