Zucchini Pancakes

Introduction

Number of Servings: 7

Ingredients

    1 large zucchini, grated
    3 large eggs
    3/4 tsp salt
    1/2 tsp white pepper

    2 tbsp unsalted butter or margarine (for the pan, so you can use oil or spray if you want)

Directions

In a bowl, mix all of the ingredients. Form into patties and fry in a pan as you would pancakes or latkes. Enjoy!

Makes between 12 and 16 depending on how big you make them.
