Amanda's BBQ Chicken

Introduction

Spice rub marinated chicken, basted with BBQ sauce. Calculated using Bull's-Eye Original BBQ Sauce (30 cal/T.). If fewer calories are desired, cut each boneless, skinless breast in half for twelve servings. Perfect for grilling on the weekend and portioning out for weekday lunches! Ingredients

    2 T. olive oil
    4 t. chili powder
    3/4 t. paprika
    3/4 t. dried sage
    1/2 t. dry mustard
    1/2 t. ground ginger
    pinch of cayenne pepper (or to taste)
    6 boneless, skinless chicken breasts
    3/4 c. barbecue sauce

Directions

Makes 6 chicken pieces.

Mix first seven ingredients in a gallon storage bag. Add chicken, seal, and toss to thoroughly coat chicken. Although marinating is not necessary, the chicken will taste better if you do! I try to let mine sit for a couple of hours before cooking. Grill over med-high heat 4-5 minutes each side. Baste with BBQ sauce on both sides, and remove from grill promptly so that the sauce doesn't burn. (Recipe allows for 2 T. sauce for each piece of chicken.)
