Grilled Butternut Squash

Ingredients

    1/2 butternut squash
    1/4 c. olive oil
    2 T. red wine vinegar
    2 T. honey
    1/2 T. dried thyme (can sub other herb, if desired)
    2 cloves garlic, minced

Directions

Slice squash into 1/2" slices. Marinate in a plastic bag with remaining ingredients for two hours. Grill over med. high heat, 5 min. per side. Remove from grill; drizzle with oil mixture. Cover with foil and let rest 12 min.
