Potato Smashers

Introduction

Ingredients

    2 small potatoes (cut in half)
    1/4 cup water
    2 slices bacon
    2 Tbsp fat free Italian Dressing
    1/4 cup 2% shredded cheddar cheese

Directions

Makes 2 servings of 1 whole potato each

Place potatoes (cut side down) and water in a microwaveable dish. Microwave on high for 10 minutes (or until potatoes are tender. Let stand for 5 minutes.

While potatoes are cooking, cook bacon in a skillet on midium heat until crisp. Drain on peper towels and allow to cool slightly. Crumble bacon and set aside.

Drain potatoes' place on cutting board and press each side with the bottom of a small bowl to flatten to 1/2 inch thickness.

Heat the dressing in a skillet on medium heat. Add potatoes and cook for 4 minutes (until bottoms are golden brown). Turn potatoes over; sprinkle with cheese and bacon. Cover skillet with lid and let cook for 2 minutes (until cheese is melted).
