1 package shelled Edamame (12 oz)
1 yellow onion, diced
2 medium Zucchini, diced
2 cloves Garlic
20 oz canned Diced Tomatoes, no salt added
2 tsp Ground Cumin
1 tsp Ground Coriander
Juice of half a lemon
4 tbsp Cilantro, chopped
Saute onions, zucchini and garlic in a large pan until soft.
Add diced tomatoes, cumin, coriander and salt & pepper to taste, and simmer until thickened (about 5 minutes).
Stir in lemon juice and ciltrano just before serving.
Serve over brown rice, spinach or lentils. Makes four servings.
