Ingredients

1 Fantastic World Tabouli Salad Mix
1 lb boneless, skinless chicken breast, diced
1 whole tomato, diced
1 whole green pepper, diced
1/4 cup onion, diced
1 cup frozen peas, thawed
1/2 cup fresh parsley, chopped (optional)
4 Tbsp extra light olive oil
2 Tbsp Lemon Juice
Directions
Place Fantastic World Tabouli Salad Mix in a bowl and add 1/4 cups boiling water and 2 Tbsp of Olive Oil to mix. Let stand for 1 hour in refrigerator. Meanwhile prepare vegetables. Saute' diced chicken in 1 - 2 Tbsp of olive oil over medium heat for about 5 minutes, until no longer pink. Fluff Salad Mix with a fork and add Lemon Juice, chicken mixture, diced tomatoes, diced peppers, diced onions, peas and parsley. Stir and serve. Makes about 6 servings. Nice to serve cold over salad greens.
