Versatile mixture of lean ground beef and vegetables that can be served in a bun, over rice, over a baked potato, or your favorite pasta. Includes a full seving of vegetables. A great dish to make two or three times what you need and freeze a batch or two for later. Ingredients

    1 pound lean ground beef
    1 cup onion, chopped
    1 cup celery, chopped
    1 cup green pepper, chopped
    1/2 cup carrot, chopped
    2 tablespoons fresh parsley, chopped
    2 tablespoons fresh oregano, chopped
    2 garlic cloves, minced
    2 teaspoons Worcestershire sauce
    1 teaspoon sea salt
    2 tablespoons spicey brown mustard
    1/2 cup ketchup

Directions

Heat 3 heavy 3 quart saucepan. Crumble ground beef into pan and stir. Add fresh chopped vegetables and spices. Stir occasionaly until vegetables are tender. Add remaining ingredients and cook for 10 more minutes, stirring occasionally to prevent sticking. Serve immediately over hot brown rice, rice and lentils, rice and beans, a hot baked potato, or even in a bun or thin bun. Very versatile.
