Black Bean Chorizo Soup

Introduction

This is not the healthiest recipie, but it is definately comfort food. You could easily modify the reciepie to cut fat by using chicken breast instead of Chorizo. Number of Servings: 6

Ingredients

    15.5 oz can black beans (drained and rinsed)
    1 large potatoe
    2 links Chorizo sausage
    1 large carrot
    1/2 medium onion
    3.5c. chicken broth
    3 cloves garilic
    1/2 jalapeno pepper (seeded)
    1 tsp. cumin powder
    3 tbs. chili powder
    1/2 lemon (juice)
    salt and pepper to taste
    2 tbs. olive oil

Directions

heat olive oil in soup pot unitl hot. Saute onion, carrot, potatoe unitl onion is translucent. Add garlic and chorizo and heat through. Then pour in black beans and broth. Add seasonings and simmer for about 20 minutes. Pure mixture to desired texture.
Serve with a tablespoon of lowfat plain yogurt or sour cream.
