IntroductionA very tasty little lunch! A very tasty little lunch!
One Thomas' English Muffin ( I only had plain, wished I'd had a Nutri-grain!)
One Egg, fried in Pam
One slice of Kraft 2% American Cheese
One handful of baby spinach, steamed in microwave & water squeezed out of.
Herbs du Provence
Salt ( I like Kosher) & Pepper
squeeze water out of & set aside.
Toast a Thomas' English muffin, & while you are doing that~ fry an egg in Pam spray,
break up the yolk a bit.
Flip over & put spinach on top, & layer the cheese on that.
Turn off the pan while the cheese melts a bit.
Add spices , serve on top of Eng muffin & enjoy!
