Greek Pastitsio

Introduction

I made a healthier version of a traditional Greek dish. Use extra-lean ground beef and 1% milk in the bechamel sauce. If you don't find the Kefalograviera cheese, you can use parmesan instead. Ingredients

    300 grams macaroni (long macaroni no 2)
    3/4 lb extra-lean ground beef
    1 medium onion, diced
    2 bay leaves
    1/2 cup tomato sauce
    1 1/4 tsp salt
    1/4 tsp ground pepper
    1 tbsp unsalted butter
    1 tbsp flour
    2 cups 1% milk
    1 egg, beaten
    2 tbsp corn starch
    2 tbsp water

Directions

Preheat oven to 350F. Boil pasta according to package directions using 1/2 tsp salt in the water. Drain and return to pot. Add 1/2 grated cheese to pasta and toss.

In a non-stick pan, brown the meat and onion, until onion is soft. Add tomato sauce, bay leaves, 1/2 tsp salt and pepper (if the mixture is too thick, add 1/4 cup water). Reduce heat to low and simmer for 5 minutes.

In a medium saucepan, heat butter and add flour, making a roux. Stirring constantly to avoid burning. Slowly add milk, stiriring as it thickens. In a small bowl beat egg, with cornstarch and 2 tbsp water. Add to hot milk and stir until sauce thickens. Remove from heat and stir in remaining cheese.

Spray a 9 x 13 inch baking dish with cooking spray. Add cooked macaroni, then spread meat mixture over macaroni (remove bay leaves). Top with the bechamel cream.

Bake for 30 minutes or until top browns.
