Introduction

A fast and easy way to make a broccoli salad for two. For more protein you can add a sliced boiled egg. Another option is to add shredded cheddar cheese. Bacon can be substituted for the beef jerky. Ingredients

    2 cups chopped fresh broccoli
    2 cups chopped fresh cauliflower
    6 tbsp Market Fresh Selections Raisin Almond Cashew Mix
    6 tbsp Market Fresh Selections All Energy Trail Mix
    1 oz Matador Teriyaki Beef Jerky high protein low fat diced
    4 tbslp *Kraft miracle whip regular
    1/4 cup Sugar

Directions

First make the dressing by mixing miracle whip and sugar together in a small bowl. In a separate big bowl add broccoli, cauliflower, cashew almond mix, and energy trail mix. I usually use a plastic bowl with lid and then shake it to mix all ingredients. Then add the dressing from the small bowl to the mixture and stir (or shake if the bowl has a lid). Garnish with diced up pieces of beef jerky.
