600g carrots, scrubbed & halved lengthwise
2 Tbl olive oil
1/4 tsp cinnamon
1/4 tsp ground cumin
Sea salt to taste
1 1/2 tsp sugar
1 tsp orange flower water
1/4 cup mint leaves, finely sliced
Meanwhite, mix together in a large bowl the juice of 1 orange with the reaming olive oil, the sugar and orange flower water. Peel the remaining oranges and slice thinly.
When the carrots are cooked, place in a bowl with the dressing. Add the carrots while still warm as this helps them take up the flavours of the dressing. Set aside until ready to serve. Add the sliced oranges and mint then mix to combine.
