Brown Rice with Vegetables

Introduction

I believe in one-pot cooking - this is a simple meal that reheats well. It's wondeful for fiber and even tastes sweet! I believe in one-pot cooking - this is a simple meal that reheats well. It's wondeful for fiber and even tastes sweet!
Number of Servings: 4

Ingredients

    1 cup brown rice
    1 cup sweet corn
    1 can diced tomatoes
    1/2 a green pepper, chopped
    3 cloves garlic
    1 can vegetable broth
    1/2 cup raisins

Directions

Put all of the ingredients into a rice cooker. (Substitute water for vegetable broth if you need to keep your sodium low). Stir, then turn the rice cooker on.

Come back when the rice cooker is finished for a great meal!
