Introduction

This is a tweaked up verson of my mom's banana bread. I turned into muffins and changed a couple ingredients to This is a tweaked up version of my mom’s banana bread. Number of Servings: 24

Ingredients

    2 cups all-purpose flour
    1 1/2 teaspoons baking powder
    1/2 teaspoon baking soda
    1/2 teaspoon salt
    1 teaspoon cinnamon
    1/2 cup applesauce
    3/4 cup brown sugar
    3/4 cups Splenda granular
    3 egg whites
    1 teaspoon vanilla extract
    2 large overripe mashed bananas
    1/4 cup skim milk (low fat buttermilk works well too)

Directions

1. Preheat oven to 375 degrees F. Grease and flour muffin pans. Makes 24 muffins
2. In small bowl, mix flour, baking powder, baking soda, salt, and cinnamon. Set a side.
3. In another bowl, blend applesauce, brown sugar, Splenda until well blended. Add eggs and vanilla. Mix well. Mix in flour mixture.
4. Stir in mashed bananas, and milk.
5. Pour in muffin pans. Bake in preheated oven for 20-30 minutes, or until do toothpick test to see if done. Serves 24
