sweet and sour turkey meatballs

Introduction

(can substitute splenda brown sugar for splenda and molasses)

skip toothpick step and just place in pan and serve as an entree over rice

Ingredients

    2 lbs ground turkey
    1/2 cup bread crumbs
    1/4 cup egg substitute
    1 tbsp each corn starch and vinegar
    1 20 oz. can of pineapple chunks
    2 tsp soy sauce
    1 cup splenda
    1 tbsp molasses
    2 bell peppers



Directions

combine egg substitute and bread crumbs
add ground turkey
form into 36 1" meatballs (or use tablespoon)
cut 2 bell peppers into 3/4"-1" cubes
drain juice from pineapples and combine with splenda, molasses, corn starch, vinegar, and soy sauce
pour into 13" x 9" baking dish
assemble 1 bell pepper cube, 1 pineapple chunk and 1 meatball on a toothpick
place standing up with meatball on bottom or lie on side in baking dish
bake 30 40 mins til meatballs are done

serving size=4 meatballs
