Mocha Mushroom Rub

Introduction

I love to use unsweetened cocoa powder in rubs for pork. It offers a great depth to the flavor. I love to use unsweetened cocoa powder in rubs for pork. It offers a great depth to the flavor.

A basic rub. A healthy one that doesn't have brown sugar or salt. It is decent, next time maybe some chile pepper or cayenne that works well with the mocha. I put it on a pork roast or tenderloin. - 4/3/12

This rub sounds marvelous! I will keep this as a base, then add other ingredients depending on my mood and tastes for that meal. This also sounds like a great addition to chili! Look for ethnic stores if you can't find stuff at your local market. - 1/30/12

  • I have chops in the freezer and can't wait to try this. Like the tips on how to do it below.

Cocoa has much less caffeine than coffee or cola. You wouldn't get hardly any with this.

Will rate it after I try it, too. - 5/23/13

  • Sounds good, but is the end product caffeinated? Or does caffeine burn off like alcohol? - 5/23/13

  • A rub is similar to a sauce but dry. You've probably heard of BBQ contests where sauces compete against dry rubs. Usually you cover the meat well and let it sit overnight, then cook. After reading the Mole recipe it looks like the pork is baked and then covered with the Mole. Interesting rub recipe! - 5/23/13

  • Do you think this would work well for a beef roast as well, or would it really just be better on pork? - 2/4/13

Sure, I would suggest that you reduce the cocoa by 1/2. Chef meg
