Black Bean Noodle Soup

Introduction

I had vegetables that needed cooking, so I threw them in a pot and the result was yummy. I don't use salt in my cooking, so there is no seasoning listed in this recipe. Ingredients

    2 Tbsp Canola Oil
    1 Cup Chopped Onion
    1/2 Cup chopped celery
    1 Cup chopped sweet red bell pepper
    1 can Bush's black beans, drained and rinsed
    1 small can Mexicorn
    1 can diced tomatoes, no salt added
    1 6 oz can V8 low sodium vegetable juice
    3 cups Kitchen Basic unsalted beef stock
    4 oz unenriched egg noodles
    4 Tbsp Taco Sauce

Directions

Makes 8 1.5 cup servings.

Saute chopped vegetables in canola oil until soft. Add canned vegetables, juice, stock, and taco sauce. Bring to low boil. Add egg noodles. Cook 10 more minutes.
