Creamy Winter Squash Sauce

Ingredients

    2 cups winter squash, cubed
    1/2 cup 2% milk
    1 tbsp and 1 tsp white flour
    1/4 tsp black pepper
    1/4 tsp oregano
    1/4 tsp salt
    dash paprika
    water

Directions

makes 6-8 servings, nutritional value based on 6 servings

1. Simmer squash pieces in water until squash is soft, but not mushy.
2. Strain cubes and place in blender or food processor. Add milk, flour, and spices, then puree until a uniform consistency is achieved.
3. If desired, pour mixture into a sauce pan and simmer on low heat while pasta finishes boiling.
