Ingredients

    Medium onion chopped
    1 tbsp canola oil
    3 cans kidney beans (19 oz or 540 ml)
    1 can no salt-added tomatoes (28 oz or 796 ml)
    1 can kernel corn
    1 lb ground turkey
    1 can mushrooms
    1 zucchini
    1 cup broccoli stems
    2 tsp salt
    2 tsp oregano
    6 tsp (2 tbsp) chili powder

Tips


Directions

Chop onion and saute in oil in dutch oven, saute ground turkey. Add canned beans and tomatoes, and drained corn. Add salt and spices. Bring to a boil and simmer for one hour.

Makes 14 1-cup servings
