Cajun Chicken Alfredo

Introduction

My rendition of cajun chicken alfredo. I add lots of broccoli, and sometimes fresh red peppers, which are not included in the calorie count, and neither is the pasta. Serve over whole grain pasta. Ingredients

    1.5 cups lowfat milk
    1 tbsp butter
    1/2 cup freshly grated parm cheese
    1.5 tsp garlic powder
    1.5 tsp low fat cream cheese
    dash of basil
    squeeze of lemon
    salt and pepper to taste
    1-2 tbsp cajun seasoning (depending on how spicy it is and your preference)
    Chicken (I used already roasted chicken I had)
    Veggies of your choice (I like broccoli)
    Corn starch slurry
    Your choice of pasta

Directions

Heat butter until melted. Add milk and heat, but do not boil! Once warm whisk in parm cheese. Add lemon, basil, salt, and pepper. Let simmer for a little bit. SLOWLY add corn starch slurry until just below desired thickness. It will thicken up a tad as it sits. This sauce is best if it sits for 15-20 mins first I think.

In a separate pan heat chicken (I threw a few pieces of the skin into a non stick pan so I didn't need any additional oil), and then add cajun seasonings. Cook until browned, and then add to sauce. Make sure its well mixed and seasoned to your liking, and then add to pasta. Add in veggies.
