Roasted Greek Potatoes

Number of Servings: 2

Ingredients

    3 cups Water
    8 ounces (about 1 cup) Potatoes
    2 tbsp Lemon Juice
    1 tsp Olive Oil
    1 clove Garlic, diced
    1/2 tsp Oregano
    Salt and Pepper

Directions

Preheat oven to 450F.

Bring the water to a boil over high heat in a 2-quart saucepan or tea kettle.

Clean potatoes but don't peel them. But the small one in half, cut larger one vertically into thick wedges.

Line a 1-quart casserole (or 8x8 baking pan) with heavy foil, pressing the foil to fit. Add the lemon juice, oil, garlic, oregano, salt and pepper. Add the potatoes, turning to coat them well, then pour in enough boiling water to equal a depth of 1/2 inch.

Bake for 20 minutes. Turn the potatoes in the dish, reduce the oven temp to 400F and bake them 40 minutes longer, or until the water is absorbed and the potatoes are tender and browned (turn the potatoes every 15 to 20 minutes during this stage).
