Ingredients

    Cake
    * *Flour, white, 1.25 cup
    * Brown Sugar, 1 cup, packed
    * Baking Soda, .75 tsp
    * Salt, .75 tsp
    * Baking Powder, .125 tsp
    * Cinnamon, ground, .5 tsp
    * Cloves, ground, .25 tsp
    * Allspice, .25 tsp
    * Applesauce, sweetened, .75 cup
    * Water, tap, .25 cup (8 fl oz)
    * Egg substitute, liquid (Egg Beaters), .25 cup
    * Cranberries, dried, sweetened (craisins), 0.75 cup
    * *Shortening, Crisco, 4 tbsp
    Meringue
    * Egg white, 1 serving
    * Brown Sugar, .25 cup, packed
    * *Lemon Juice, .25 fl oz

Directions

Combine all ingredients except for .25 brown sugar, egg white, and lemon juice. Pour into greased/floured 9x9 pan and bake at 350 degrees for about 50 minutes or until toothpick comes out clean. Before removing from oven, beat egg white until foamy, then slowly beat in remaining brown sugar and lemon juice until thick. Pour meringue over hot cake and bake an additional 8-10 minutes a 400 degrees or until top is brown. Cool and serve.
