Introduction

Makes approximately 5-1 1/2 cup servings Makes approximately 5-1 1/2 cup servings
Number of Servings: 5

Ingredients

    3 Cups Hy-Vee wide egg noodles

    1 tsp. EXTRA VIRGIN OLIVE OIL (2 full Misto Sprays)

    1/2 med onion chopped
    4 Large Garlic Cloves minced
    2 Cups Roasted Chicken Meat (chunks)
    2 Cups Raw Baby Spinach, chiffonade
    1 pinch Morton Coarse Kosher Salt
    1 tsp. Fresh Ground Black Pepper

Directions

Egg Noodles...

Bring large pot of water to a boil.
Add egg noodles cook until tender.
In a colander drain.
Return to empty pot.
Spray w/half a Misto spray. Mix well.

While waiting for water to boil...

Spray large skillet with one full spray EXTRA VIRGIN OLIVE OIL (2 full Misto Sprays)
Sweat onions until translucent.
Add garlic, Stir until garlic is a light golden color.
Add chunks of chicken.
Stir until chicken is warm.
Spray Half spray of EXTRA VIRGIN OLIVE OIL if needed.
Add Spinach.
Season to taste with Salt and Pepper.

Add Egg Noodles to Chicken and Spinach. Stir well.
Plate
Top with My White Sauce. (optional)
