Introduction

They are crunchy and chewy at the same time, easy and super healthy. They are crunchy and chewy at the same time, easy and super healthy.
Number of Servings: 24

Ingredients

    Ingredients:
    2 1/2 cups old fashioned oats
    1 cup whole wheat flour
    1 tsp baking soda
    1 tsp vanilla extract
    3/4 cup shredded coconut
    4 oz applesauce
    2 1/2 tbsp flaxseed
    1/4 cup honey
    1/3 cup packed brown sugar
    2 oz chopped pecans
    2 oz slivered almonds.

Directions

Preheat oven to 325 F. Lightly grease one 9x13 inch pan.
In a large mixing bowl combine the oats, flour, baking soda, vanilla, applesauce, flaxseed, honey and brown sugar. Stir in nuts and coconut.
Lightly press mixture into the prepared pan. Bake at 325 F for about 20 minutes. Let cool for 10 minutes, then cut into bars. Let bars cool completely in pan before removing or serving.
Makes 24 bars, serving size is 1 bar.

    I used sugar free applesauce and two splenda and cranberries instead of pecans this cut the calories to equal 105 per bar. My family and i love them they are so good, my husband couldn't stop eating them. - 1/25/09

    Ok, I redid the recipe a tad and now add 2/3's the amount listed of applesauce and fill the remainder of the cup with more honey. They stick together perfectly without any other changes! My boyfriends won't go back to the boughten ones!! :) - 3/31/09

    Delicious and quick. Did not put in any brown sugar (too sweet). I turned off the oven, took them out and cut them up straight away. Then flipped them over and put them back in the turned off oven to "dry out" for 2 hours. Love the crunch and flavor. I also used cranberries instead of pecan - 7/24/09

    PERFECT! I tried some other ones that were on here and they weren't good. These, I LOVE! I added craisins & dried cherries also. Sprinkled cinnamon on the top before I baked them also. DELISH! Can't wait for my 5 and 2yr old to try them tomorrow! - 5/31/08

    I like these - not too sweet, easy to make. I sprinkled them with a bit of cinnamon. Decided to explore recipes for granola bars since I discovered that the high-fiber bars I've been buying have that high density glucose syrup that we're supposed to avoid. - 3/8/08

    I left out the coconut because I don't like it, but did everything else the same. I think they are not very good and lack flavor. Maybe I should have added dry fruit. They did not stick together very well and did not fill the whole pan, - 5/5/12

    Love this recipe, however I did find you needed to add more honey to keep them together. I also added a teaspoon of cinnamon. My husband suggested next time I use molasses instead of extra honey. - 10/12/11

    I make these every week now, and have done a lot of variations. They're way better than buying granola bars! I do add more honey because they stick together much better that way. - 7/10/11

    I added about 2 extra tablespoons of honey to the batter to help it stick together and I left it in the oven for an extra half hour after turning off the oven. It's nice and crunchy, but not a wow. I think I'll like it with yogurt or with applesauce, but by itself, it's not very exciting. - 2/14/11

    These are very good. They fit the bill for something to go with my yogurt for breakfast and even my 4 year old gobbles them up! Not very sweet at all, but nice satisfying chew to them. A keeper - 10/14/09

    My husband and son loved these. I replaced the honey with maple syrup and the flax seed with whey protein. (didn't have the others on hand) I also added choc chips as suggested earlier. These were very good. My changes increased the cal to 119 and dropped fat to 4.9.

    I put in some rasins, crasins, and some choc.chips. It turned out great and very filling. When the first come out they were very moist, so I cut them up and placed back in the cooling oven (overn turned off) and it helped dry them out a bit. Still AWSOME! - 5/4/08

    I made these this afternoon for my boys to have after school. They loved them. I didn't have coconut, so I used unsalted sunflower seeds instead. I had a little trouble getting them to hold together. Next time, I may removed them from the pan and bake a while spread out on a cookie sheet to dry. - 4/3/08

    Great flavor. I like to add a tsp of peanut butter on top of the bar. I didn't get 24, maybe I cut them too big. Will definitely make again. I made some for the kids with Choc. chips - big hit! - 12/13/11

  • I subbed dates and golden raisins for the pecans, since I had none. I added 1/2 tsp almond extract along with the vanilla. They are in the oven now, the house smells delicious (so was the dough). I also left out brown sugar, oops. The baking makes me feel like I am making a forbidden treat! 88 cal - 6/6/11

  • I made these with some slight variations and they were great! I cut out the flax seed and pecans, and added toasted coconut, toasted the almonds, and added Craisins. I also used 1/4 cup brown sugar and 1/8 cup agave nectar, and made a chocolate drizzle out of powdered sugar, cocoa powder, and milk. - 1/29/11

  • I used less coconut and added almonds, sunflower and pumkin seeds. Since it didn't stay in bar form for me, I use 2/3 C of the granola and 1/2 C milk, throw it in the microwave for 1.5 minutes and I have super tasty hot cereal, yum!! - 1/6/11

  • I used 8 oz of unsweetened applesauce as they were so dry to mix. Also used Twin brown sugar, no coconut & sliced almonds vs slivered. They were pretty good & I will make again, but may try the maple syrup vs honey next time. Cal Made 21 bars. 97.2 cal; tot fat 2.9; Carb-16; Protein 2.6; Fiber 2.4 - 1/15/10

  • I made these with all walnuts and I put a little coconut extract since I didn't have coconut on hand. Real coconut might make them a little sweeter since I found them to just be ok on flavor. I do think that I will adjust the honey and applesauce ratio since they do not want to stick together. - 1/3/10
