Fajitas

Introduction

Yummy, quick, lime-infused fajitas, sans tortilla. Yummy, quick, lime-infused fajitas, sans tortilla.
Number of Servings: 2

Ingredients

    Onion, bell pepper, red pepper flakes, fresh lime juice, chicken breast, coconut oil, cilantro, cumin

Directions

Chop cilantro and set aside
Cut avocado into small pieces and set aside
Slice onions and bell peppers into long strips
Slice chicken breast into strips
Warm coconut oil and red pepper flakes in a large frying/saute pan on high heat
Add onions and green bell pepper to pan and cook, tossing constantly, until fragrant and lightly browning, 2-4 minutes
Add chicken, cumin and seasoning salt, and continue to cook on high or med-high heat until the chicken is opaque throughout - 3-5 min.
Transfer to plates and squeeze lime juice over the mixture. Top with chopped avocado and cilantro.
