2 1/2 lb. beef roast, trimmed and chopped into 1" cubes
1 pkg baby carrots or 2 c. chopped regular carrots
6 red-skinned potatoes (about 2 lb.), washed and chopped (unpeeled)
1 small onion, chopped
1 pkg Lipton Beefy Onion Soup mix
32 oz. beef broth OR 4 c. water & 4 beef bouillon cubes
1 tsp. crushed garlic
Parsley to taste
Oregano to taste
1/3 c. Flour
3 tbsp. butter
Add beef, carrots, potatoes, and onion. Add garlic and other spices to taste.
Cook on low for 8 hours (or on high for 4 hours).
30 minutes prior to serving, melt butter in the microwave, and mix flour into the butter until a stiff dough-like consistency is reached. Add to the crock pot and stir until it is dissolved. Let cook on high for 30 minutes and then serve.
