Peanut Pumpkin Soup

Number of Servings: 12

Ingredients

    4 T unsalted butter
    1 small onion diced
    4c canned pumpkin
    2c. cooked and pureed sweet potato
    1c smooth peanut butter
    6c chicken broth
    1/2 T red pepper flakes
    salt and pepper to taste

Directions

melt butter in large stock pot. Add onion and red pepper flakes and cook until onion has softened (~5 minutes). Add all remaining ingredients except broth and whisk to mix while warming through. Add broth and simmer for 15-20 minutes. Adjust salt and pepper to taste before serving. Can be made with vegetable broth for a vegetarian option.
