Lentil Stew

Introduction

Number of Servings: 7

Ingredients

    1 tbsp olive oil
    1 large onion, chopped fine (about 2 cups)
    1.5 cups diced carrots (about 4 medium)
    4 cups water
    4 cups vegetable stock (or use all water to cut sodium)
    0.5 tsp salt
    1 large jar of salsa (24-26 oz, any brand will do) I like medium to add some zing
    5 oz baby spinach

Directions

Add oil, onions, and carrots to large stockpot and cook over med-high heat about 5 minutes.
Add salt, water, broth, and salsa. Bring to a boil. Cover, reduce heat, and simmer over med-low heat 50 minutes.
Add spinach and simmer 10 minutes more.
Makes about 7 servings, 2 cups each.
