Ingredients

    *Sorry for the awkward measurements, I single-servinged the recipe and tweaked it a bit*

    1 egg white
    1/4 c. 2 tsp. Unsweetened Almond Breeze
    1 tbp. unsweetened applesauce
    1//8 tsp. vanilla extract
    1/8 c. 2 tsp. whole wheat flour
    2 tsp. all-purpose flour
    1 tbp. 1 tsp. flax seed meal (ground flax seeds)
    2 tsp. wheat germ
    3/4 tsp. baking powder
    1/2 tsp. sugar

Directions

*Makes 1 LARGE waffle or about 5 mini ones= 1 serving*

1. Preheat a waffle iron according to manufacturer's directions.
2. Whisk together the egg white, milk, applesauce, and vanilla in a bowl.
3. Beat in the flours, flax, wheat germ, baking powder, and sugar until everything is well-combined.
4. Spray the waffle iron with nonstick cooking spray and pour the batter onto the iron. Cook the waffle according to manufacturer's directions*.
5. Serve immediately with sugar free syrup or fresh fruit or whatever you like! Enjoy!

*To have a perfectly crisp waffle, this waffle must be cooked on the lowest setting (for example, my iron goes from Light to Dark and I always cook it on Light)- this will take longer, about 6 minutes, but it's well worth it.
Then, take the waffle out for about 2 minutes so it's cooled down, then pop it back in the iron for about another 2-3 minutes. It should be crisp and light and delicious!
