Swedish Style Yellow Pea Soup

Introduction

Easy and quick to put together, but the peas need to soak overnight or 8-10 hrs.
This is a traditional Thursday night entree in many areas of Sweden, served with Spicy Brown Mustard and crisp breads, flat breads or slices of rye bread.
Easy and quick to put together, but the peas need to soak overnight or 8-10 hrs.
This is a traditional Thursday night entree in many areas of Sweden, served with Spicy Brown Mustard and crisp breads, flat breads or slices of rye bread.

Number of Servings: 14

Ingredients

    18 oz Lars own Whole Yellow Peas (511g)
    1lb finely diced yellow onion (450g)
    20 oz boneless pork ribs (510g)
    2 Qts Water
    1 tsp Marjoram or Thyme, or mix of both
    3 tsp NuSalt Salt substitute
    1/2 tsp black pepper

Directions

Makes about 14 -1 cup servings
Rinse and sort yellow peas in colander.
Place in soup kettle or dutch oven. Add 5 cups of cold water and soak over night.

Discard water and add the pork, diced onions, 2 Qts water, the NuSalt, thyme/marjoram, pepper. Bring to boil and reduce heat to low. Cover and cook on low 1 1/2 - 2 hrs. or until shells of peas split. Remove the pork from the pan and dice or shred if desired and then return to pan. Serve with a bit of Swedish Style Spicy Brown Mustard and crisp bread, flat bread, or limpa rye.
