Cornbread Crumb Chicken

Introduction

Use your leftover cornbread for this recipe. You can use other breading as well. But the cornbread gives it a sweetness to the tang of the sour cream. Use your leftover cornbread for this recipe. Ingredients

    2 boneless skinless chicken breasts (3 oz each)
    cornbread, crumbled
    4 TBS. low-fat sour cream
    1/2 tsp. salt (or to taste)
    1/4 tsp. pepper (or to taste)
    1/2 tsp. ground sage (or to taste)

Directions

Preheat oven to 350 degrees. Spray baking dish with non-stick spray. Crumble cornbread pieces and place into a bowl. Spread sour cream on each chicken breast on both sides. Dredge through the cornbread crumbs. Place each in baking dish and season with salt, pepper, and sage. Cook for 30-45 minutes until done.
