Banana and Walnut Cake

This is a Be-Ro recipe I baked for my birthday - wonderful moist cake, although high in calories, well worth it.....

This is a Be-Ro recipe I baked for my birthday - wonderful moist cake, although high in calories, well worth it.....

Number of Servings: 10

Ingredients

    225g self raising flour
    1/4 tsp bicarbonate of soda
    a pinch of salt
    75 g margarine
    175g caster sugar
    2 eggs - beaten
    450g fresh bananas (weighed with skin on, remove skin and mash)
    100g walnuts chopped (I only used 70g)

Directions

grease and line a 2lb loaf tin or round cake tin (this changes the cooking time)
mix flour, bicarb and salt in a bowl
cream butter and sugar together until pale and fluffy, add beaten egg and flour a little at a time, alternately
stir in remaining flour, mashed bananas and walnuts and place in prepared tin. bake for 1 1/4 hours for loaf tin, or 55 mins in a round (check after 55 mins and if skewer comes out clean it's done)
cool on wire rack
