Simple "Get Well" Tofu Soup

Introduction

A vegetarian spin on my moms chicken noodle soup. When I was sick she would make me chicken noodle soup. Becoming vegetarian, when I got sick, I couldn't have her soup! Ingredients

    .5 block firm tofu
    .25C onion
    1C chopped onion
    1C diced celery
    1C chopped carrots
    4C vegetable broth (I use low sodium!)
    2C water
    1C egg enriched egg noodles (pre-cooked)

Directions

Cube tofu and place onto bottom of crockpot. Add cut up celery, onion and carrots, mix lightly. Add in water and vegetable broth as well as cooked noodles. Cook on high if you're looking to consume within 1-4 hours. Cook on medium - low if you're looking to consume within 4-12 hours.
