Simple baked potatoes

Introduction

The best way to bake a potato so it turns out fluffy with crisp skin is to scrub it thoroughly, oil it up (coconut oil is recommended for health but I only ever use olive) and then HEAVILY salt it. I recommend sea salt. You will later rub the salt off, so don't worry.

You will let the potatoes steam in their jackets while drawing out moisture through the salt. This results in the puffy texture rather than sogginess caused by wrapping in foil.

Ingredients

    potatoes (red or white, the classic is white but I use red because that is what we commonly have in the house)
    olive oil
    SALT

Directions

Scrub scrub scrub those potatoes, you want to eat that skin! Try to pick potatoes that are free of blemishes so you don't have to cut out eyes or pierce the skin. DO NOT FORK THE POTAOTES!

Put a tablespoon of oil in your hand and then rub it all over the potato until coated, repeat with all potatoes.

Put on a tray and cover in kosher or sea salt (1 tbsp per potato). It should be visibly salted.

Bake at 420 for 20 minutes, turn potatoes and NOW you can fork them to release steam. Bake another 20 minutes.

Brush off as much salt as possible before serving. You should be able to eat these potatoes without any condiments!
