1 can (10.2 oz) Pillsbury® Grands!® Homestyle refrigerated buttermilk biscuits (5 biscuits)
5 large eggs
10 tablespoons Old El Paso® Thick 'n Chunky salsa, divided
10 tablespoons light sour cream, divided
10 tablespoons shredded mild Cheddar cheese, divided
5 tablespoons bacon bits or diced ham, divided

Additional Old El Paso® Thick 'n Chunky salsa, if desired
Additional Sour cream, if desired
Directions
· Pre-heat oven to 350°F. Spray five (6-oz) custard cups or five (8-oz) ramekins with Non-Stick Cooking Spray.
· Flatten each biscuit into 6-inch rounds. Arrange each round inside of each cup. Press dough lightly on bottoms and sides of cup. Set aside.
· Spoon 1-tablespoon of the salsa into center of each cup; top each with 1-tablespoon sour cream and then 1-tablespoon of the cheese. Break an egg into each cup. Top each egg with an additional 1-tablespoon of salsa, then sour cream and then cheese. Sprinkle 1-tablespoon of the diced ham on top of each filled biscuit.
· Arrange the custard cups or ramekins on large cookie sheet.
· Bake 25 to 30 minutes or until eggs are set and biscuits are golden brown. Cool 10 minutes. If desired, garnish with additional salsa and sour cream.
