Smothered Potatoes

Introduction

I got this off of TV a local cooking show - Fox network. Very good. Instead of salt you can use seasoned salt. Also I used vegetable broth instead of chicken broth. Number of Servings: 3

Ingredients

    2 T olive oil
    2 large potatoes
    1/2 cup diced green pepper
    1 cup onion
    1 tsp salt
    1 tsp garlic powder
    1 tsp black pepper
    1 cup chicken stock

Directions

Heat enough oil to coat bottom of large pan. Peel and slice potatoes. Put in hot pan and add green pepper and onion. Season with salt, garlic powder, and pepper to taste. Brown potatoes on both sides, once browned add one cup chicken stock. Cook about 20 minutes. Add more stock if needed. Ready when potatoes are soft.
