Confetti rice

Introduction

Colorful side dish with any meal. Tastey and healthy too! Colorful side dish with any meal. Tastey and healthy too!
Number of Servings: 12

Ingredients

    2 cups Brown rice (not instant)
    2-1/2 cups Chicken Broth
    1/2 cup water
    2 tsp Garlic Powder
    1 tsp Mrs Dash Original Blend Seasoning
    1/2 cup Red Bell Pepper, diced
    1/2 cup Green Bell Pepper, diced
    1/2 cup Yellow Bell Pepper, diced
    1/2 cup onion, diced


Directions

Place rice, broth, water and garlic powder in a pot and stir to mix. Bring to a boil and cover pot with tight-fitting lid. Lower heat and simmer. After 20 minutes stir in diced onions, re-cover and continue to simmer another 10 minutes. Then stir in Red, Green & Yellow diced Bell Peppers, re-cover and simmer another 5 minutes. Remove from heat, leaving lid on another 5 minutes. Fluff rice with fork and distribute vegetables. Sprinkle with seasoning and serve.
