Pumpkin Pie w/wafers

Introduction

This dessert is an extra light substitute for pumpkin pie this holiday season. This dessert is an extra light substitute for pumpkin pie this holiday season.
Number of Servings: 6

Ingredients

    Reduced Fat Nilla' Wafers (30 whole wafers, 7 crushed)
    Large box Fat Free Sugar Free Vanilla Pudding (1.5 Oz size)
    2 cups Skim Milk
    1 cup Libby's Easy Pumpkin Pie Puree
    3/4 tub Fat Free Whipped Topping

Directions

Mix Vanilla Pudding and Skim milk in large bowl for 2 minutes.
Stir in 1 cup Pumpkin Pie Puree.
Let sit for 5 minutes to thicken.
Gently fold in Whipped topping.
In an 8 inch pie plate place 15 Nilla' Wafers
Top with 1/2 of the pumpkin mixture.
Place 15 more Nilla' wafers on mixture.
Top with remainder of pumpkin mixture.
Sprinkle the crushed Nilla' wafers on top.
Cover loosely w/foil and refrigerate till you serve.

Nutritional info is for 6 servings, could easily pass for 8 servings.
